After my Weekend Coffee Share where I offered you blueberry soup as an alternative beverage, several of you asked for a recipe. So here we go, this is one of my favourite recipes for blueberry soup:
2 cups of blueberries (fresh or frozen)
2 cups of water
2 tbs honey (or sugar)
1tbs of flour mixed with water
Boil water and honey/sugar until everything is solved. Add blueberries, let it boil for about 3 min. If you want the soup to be smooth you can mix it now, otherwise you can skip that. Whisk the flour and water in a separate dish until smooth. Whisk it into the soup. Simmer 4-5 min while whisking every now and then. Enjoy it with a good conscience, blueberry soup is packed with vitamins and antioxidants. I can’t wait to fill up my freezer with blueberries from the woods around here next summer.
