After my Weekend Coffee Share where I offered you blueberry soup as an alternative beverage, several of you asked for a recipe. So here we go, this is one of my favourite recipes for blueberry soup:
2 cups of blueberries (fresh or frozen)
2 cups of water
2 tbs honey (or sugar)
1tbs of flour mixed with water
Boil water and honey/sugar until everything is solved. Add blueberries, let it boil for about 3 min. If you want the soup to be smooth you can mix it now, otherwise you can skip that. Whisk the flour and water in a separate dish until smooth. Whisk it into the soup. Simmer 4-5 min while whisking every now and then. Enjoy it with a good conscience, blueberry soup is packed with vitamins and antioxidants. I can’t wait to fill up my freezer with blueberries from the woods around here next summer. I have never had blueberry soup made with fresh/frozen blueberries. Only the kind that comes in a bag with a powder. Having the “real deal” must be quite a difference. That recipe sounds delicious. And yes, blueberries are packed with “good stuff.” 🙂

I will definitely have to try this – one of my toddler’s favorite meals to pretend cook me is blueberry soup, so I expect the real deal to be a hit.

I would think that the real deal would be a hit then 🙂 I would love to hear how it goes. One of my earliest memories is my mom babysitting the kids next doors, and one of them fell asleep while we were seated at the table eating blueberry soup. She served the soup in big bowls, and the little boy’s head fell with a big splash right into the blueberry soup! It was evening and I believe it was his third taking of the soup.
